Qualities

Coconut butter is simply fresh coconut meat that has been dried and ground into a smooth and creamy spreadable paste.

Coconut contains no cholesterol or trans fats but is pretty high in saturated fat (9g/Tbsp) and is appreciated for a number of essential nutrients, including dietary fiber (about 2g/Tbsp), potassium, manganese, phosphorus, iron, copper, and selenium.

Common Use

coconut butter makes a delicious spread all by itself or combined with another nut butter (try a blend with hazelnut butter, maple syrup, cocoa powder, vanilla extract, and a pinch of salt for a homemade version of Nutella). It lends extra creaminess to raw chocolate or energy bars, delicious when melted over sweet potatoes or roasted winter squash, mixed into curries as a coconut milk replacement, blended into
smoothies, or spooned straight from the jar as a satisfying snack.

Storage

Store in a sealed container at room temperature for a spreadable consistency. Refrigeration will harden the butter but is recommended for longterm storage.
