Nutmeg isn’t truly a nut, it is the pit of a fruit that is similar to an apricot. The tree can be harvested seven to nine years after it is planted, and it is in full production after 20 years. After harvesting, the seeds are dried over a period of six to eight weeks as the nutmeg itself shrinks away from the hard outer seed coat. The shell is then broken to remove the nutmeg kernel and then crushed into a powder.
Oats are about 66% carbohydrates (including 11% dietary fiber and 4% beta-glucans), 7% lipids and 17% protein. Their high fiber content and especially the Beta-glucans (a type of soluble fiber) have shown to lower cholesterol and reduce the risk of type 2 diabetes and heart disease.
Oats are also a very good source of the vitamin B complex and minerals such as phosphorus, potassium, magnesium, calcium, and zinc. Even though pure oat groats do not contain gluten, most oats are cultivated and processed in such a way that cross-pollination and cross-contamination with wheat are likely to occur.
Powdered nutmeg can be used in a wide variety of baking recipes. It also goes nicely with root vegetables and dark meats. If you have a grater and for the most intense flavor, use the whole nutmeg.
